Ingredients
- 1 lb Chicken Breast, thin-cut or pounded evenly
- 1 tsp Chipotle Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Chili Powder
- 1/2 tsp Cumin
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 tbsp Lime Juice, about half a lime
- 2 tbsp Olive Oil
Directions
- Prep the Chicken: Pat chicken dry with paper towels. If using thicker cuts, lightly score the surface to help the marinade soak in.
- In a small bowl, combine the chipotle powder, smoked paprika, chili powder, cumin, onion powder, garlic powder, salt, and black pepper. Mix well to create a spice blend.
- Place the thin-cut chicken breast in a shallow dish. Drizzle with olive oil and lime juice, then sprinkle the spice blend evenly over both sides of the chicken. Rub the spices into the chicken to ensure even coating. Let marinate for at least 15 minutes to allow the flavors to meld.
- Skillet: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken breast to the skillet. Cook for 5-7 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
- Bake at 425°F for 18–20 minutes, then broil 2–3 minutes for added color.
- Grill: Cook over medium-high heat for 5–6 minutes per side until charred and internal temp reaches 165°F.
- Once cooked, remove the chicken and let it rest for 5 minutes on a cutting board to retain its juices. This will help keep the chicken tender and flavorful.
- Slice the chicken against the grain into strips or serve whole. Drizzle with any remaining lime juice for an extra burst of flavor.
