Homemade Chicken Shawarma with Garlic Yogurt Sauce

Ingredients

  • 2 lbs chicken thigh fillets, skinless and boneless
  • 1 large garlic clove, minced (or 2 small cloves)
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamom
  • 1 tsp ground cayenne pepper, (reduce to 1/2 tsp for less spice)
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp lemon juice
  • 3 tbsp olive oil
  • 1 cup Greek yogurt
  • 1 clove garlic, crushed
  • 1 tsp cumin
  • 1 squeeze of lemon juice
  • To taste salt and pepper

Directions

  1. In a mixing bowl, combine the minced garlic, ground coriander, ground cumin, ground cardamom, ground cayenne pepper, smoked paprika, salt, black pepper, lemon juice, and olive oil. Whisk until well blended to create a marinade.
  2. Place 2 pounds of boneless, skinless chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for deeper flavor.
  3. Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the edges are slightly charred.
  4. While the chicken is grilling, prepare the garlic yogurt sauce. In a bowl, mix the Greek yogurt, crushed garlic, cumin, and a squeeze of lemon juice. Season with salt and pepper to taste. Stir until smooth and set aside.
  5. Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes. Slice the chicken into thin strips.
  6. Serve the sliced chicken wrapped in pita bread or over a plate of rice, drizzled with the garlic yogurt sauce and your favorite toppings like tomatoes, cucumbers, and fresh herbs.
