- 2 (15-ounce) cans chickpeas, drained and rinsed

Directions
- Heat the vegetable oil or coconut oil in a large skillet over medium heat until shimmering, about 2 minutes.
- Add the sliced onion and sauté until softened and translucent, about 5-7 minutes. Stir occasionally to prevent burning.
- Add the minced garlic and crushed red pepper flakes. Sauté until fragrant, about 30 seconds.
- Stir in the curry powder and cumin, cooking for another minute to toast the spices and enhance their flavor.
- Pour in the crushed tomatoes and coconut milk, stirring until well combined. Bring the mixture to a simmer.
