  • 2 tablespoons vegetable oil or coconut oil
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • ¼ teaspoon crushed red pepper flakes
  • 1-2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 (15-ounce) can crushed tomatoes
  • 1 (13.5-ounce) can coconut milk
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish (optional)
  • Lime wedges, for garnish (optional)
  • Naan bread or rice, to serve (optional)

Directions

  1. Heat the vegetable oil or coconut oil in a large skillet over medium heat until shimmering, about 2 minutes.
  2. Add the sliced onion and sauté until softened and translucent, about 5-7 minutes. Stir occasionally to prevent burning.
  3. Add the minced garlic and crushed red pepper flakes. Sauté until fragrant, about 30 seconds.
  4. Stir in the curry powder and cumin, cooking for another minute to toast the spices and enhance their flavor.
  5. Pour in the crushed tomatoes and coconut milk, stirring until well combined. Bring the mixture to a simmer.
  6. Add the drained and rinsed chickpeas to the skillet. Stir to coat the chickpeas with the sauce.
  7. Season with salt and pepper to taste. Allow the curry to simmer gently for 15-20 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.
  8. Taste and adjust seasoning if necessary. If desired, add more curry powder for extra spice or a splash of lime juice for brightness.
