Tomato Basil Pasta w. No Cream for Camping

Ingredients

  • 8 ounces pasta, (any type you prefer, such as penne or spaghetti)
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • pinch red chili flakes, (optional, for heat)
  • 1 can crushed tomatoes, (14-28 oz, whatever you have)
  • to taste salt

Directions

  1. Bring a large pot of salted water to a boil over a campfire or portable stove.
  2. Add the pasta to the boiling water and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
  3. While the pasta is cooking, heat olive oil in a large skillet over medium heat. If using a camp stove, you can place the skillet on top.
  4. Once the oil is hot, add the dried basil and dried oregano. Sauté for about 30 seconds until fragrant, stirring constantly to prevent burning.
  5. Pour in the crushed tomatoes and add a pinch of red chili flakes if using. Stir to combine and let the sauce simmer for about 5-7 minutes, allowing the flavors to meld together. Season with salt to taste.
  6. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta. Add the drained pasta directly to the skillet with the tomato sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  7. Toss the pasta in the sauce until well coated and heated through, about 2-3 minutes. Serve hot and enjoy your meal under the beautiful camping sky.
