Tomato Basil Pasta w. No Cream for Camping

Ingredients
- 8 ounces pasta, (any type you prefer, such as penne or spaghetti)
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- pinch red chili flakes, (optional, for heat)
- 1 can crushed tomatoes, (14-28 oz, whatever you have)
- to taste salt
Directions
- Bring a large pot of salted water to a boil over a campfire or portable stove.
- Add the pasta to the boiling water and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. If using a camp stove, you can place the skillet on top.
- Once the oil is hot, add the dried basil and dried oregano. Sauté for about 30 seconds until fragrant, stirring constantly to prevent burning.
- Pour in the crushed tomatoes and add a pinch of red chili flakes if using. Stir to combine and let the sauce simmer for about 5-7 minutes, allowing the flavors to meld together. Season with salt to taste.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta. Add the drained pasta directly to the skillet with the tomato sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Toss the pasta in the sauce until well coated and heated through, about 2-3 minutes. Serve hot and enjoy your meal under the beautiful camping sky.
