- ½ teaspoon garlic powder
- ½ teaspoon dried rosemary
- ½ teaspoon dried thyme
- 2 medium potatoes, sliced into ¼-inch pieces
- 1–2 tablespoons olive oil

- 2 sheets aluminum foil
Directions
- Prepare your campfire or grill for medium heat.
- In a medium bowl, combine the sliced potatoes, garlic powder, dried rosemary, dried thyme, and salt. Drizzle with olive oil and toss gently until all the potato slices are evenly coated with the oil and seasonings.
- Lay out two sheets of aluminum foil, each about 12 inches long. Divide the seasoned potatoes evenly between the two sheets, placing them in the center of each sheet.
- Fold the sides of the foil over the potatoes to create a sealed packet. Ensure there are no gaps for steam to escape. Fold the ends of the foil over to secure the packet completely.
- Place the foil packets on the grill or over the campfire, cooking for 20-25 minutes. Use tongs to flip the packets halfway through cooking for even heat distribution.
- After 20-25 minutes, carefully remove the packets from the heat. Open one packet with caution, as steam will escape. Check if the potatoes are fork-tender; if not, seal it back up and cook for an additional 5 minutes.
