Ingredients
- 1 cup dried lentils, rinsed and drained
- 4 cups water or vegetable broth
- 1 tablespoon oil, (olive, coconut, or vegetable)
- 1½ teaspoons salt
- 1½ teaspoons curry powder
- 1 teaspoon ground cumin
- ½ teaspoon ground turmeric
Directions
- Heat the oil in a large pot over medium heat. If you're camping, use a portable stove or heat over the campfire until the oil is hot and shimmering.
- Add the rinsed lentils to the pot and stir for about 1 minute until they are lightly coated in oil and fragrant.
- Pour in the water or vegetable broth and add the salt, curry powder, cumin, and turmeric. Stir well to combine all the ingredients.
- Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot, simmering for about 20-25 minutes, or until the lentils are tender and the soup has thickened slightly. Stir occasionally to prevent sticking, and add more water if necessary to reach your desired consistency.
- Taste the soup and adjust seasoning if needed. You can add more salt or spices according to your preference.
- Once done, take the pot off the heat and let it sit for a few minutes before serving. Enjoy your warming soup right out of the pot or in bowls.
